Let’s make some Wild Blueberry Roasted Brussel Sprout Salad!

The holiday season is coming upon us! And many of us are looking for some new recipe ideas to dazzle our family and friends! Now, more than ever we are interested in staying healthy and maintaining our weight during the season without sacrificing the flavor. We know that adding a little bit of blue to the holiday will make it much more festive! But there are a lots more reasons why you should go out and get a bag of wild blueberries and make them a part of your annual holiday celebration. Here is how they differ from the garden variety kind of blueberry:

- Wild blueberries have been part of the American landscape for over 10,000 years!
- Wild blueberries are genetically diverse so eating them helps us maintain variety in our food supply!
- Wild blueberries are frozen where they are grown the quality and nutrition are packed tight in there so they are at their best when they come to our kitchen! Look for the wild on the bag when you are looking for wild blueberries.

This holiday salad uses the goodness of wild blueberries and seasonal produce like lettuce, pecans and Brussels sprouts available at the local farmers’ markets. It will make a great addition to your holiday table! You can even make it for a quick special lunch during the busy season also!
Recipe for Wild Blueberry Roasted Brussel Sprout Salad
Wild Blueberry Holiday Salad with Wild Blueberry Vinaigrette
This delicious salad is absolutely beautiful as you can see! I love adding the rich color of blue and the luscious flavor of the wild blueberries. I hope that you enjoy it as much as me and my family!
Makes 4 servings
4 cups salad greens
1 1/2 cup fresh Brussels sprouts
1 cup frozen wild blueberries
1/3 cup roasted pecans
Approximately 1/3 cup red onion rings
1/3 cup blue cheese
1 tablespoon olive oil
Salt and pepper to taste
Wild Blueberry Vinaigrette (see recipe below)
To roast Brussels sprouts, preheat oven to 425 degrees. Trim woody stem and slice in half. Toss in olive oil and place on a cookie sheet. Roast turning every 5 minutes until sprouts begin to caramelize, about 15 minutes. Allow to cool and begin making the rest of the salad. In four bowls, divide salad greens, onion rings, wild blueberries and pecans. When Brussels sprouts have cooled to touch, place them on top of the salad and top with blue cheese. Serve with Wild Blueberry Vinaigrette.
Wild Blueberry Vinaigrette
This salad colorful salad dressing was inspired by a recent restaurant visit. I love the wild blueberry flavor and it goes so great over this salad but will also pair well with some of your old favorites! The color of it is just beautiful!
Makes one cruet full.
1/2 cup olive oil
1/4 cup red wine vinegar
1 cup frozen wild blueberries
Juice of 1/2 lemon
1 tablespoon honey
Salt and season to taste
Allow blueberries to begin thawing in a bowl, while you put together the Wild Blueberry Holiday Salad. Add them to a food processor along with vinegar, lemon juice and honey. Process these ingredients into a very thin puree. Add olive oil and process to mix well. Taste and add a little salt if desired. Use a small kitchen funnel to add the dressing to the cruet.
