Summer is the season for having fun outside and celebrating. Whether it be a barbecue, graduation, or lunch on the patio, I have the perfect appetizer for you to make! It is light and quick, so it will keep you out of the kitchen when you want to take part in the summer festivities!
One of the secret ingredients for this perfect party appetizer/snack is the light, crisp texture and delicious taste of a Breton cracker! They make something simple that tastes like you spent hours in the kitchen. For my recipe, I used Breton’s Original Cracker, which starts with simple elegance and has a tender-crisp texture that is wonderful with almost anything to top it off. Still, I also love Artisanal Cranberry and Ancient Grains made with wheat flour, spelled, and amaranth.
However, there are lots of Breton crackers, and other varieties would be equally delicious! Spelt and amaranth are older grains that we don’t often have in our meals, so they add a little more variety to our diet. The Breton Artisanal Sweet Potato and Ancient Grains uses quinoa and rye. There are also two Breton Bean varieties: black Bean with Onion and Garlic or White Bean with Salt and Pepper.
I also love that Breton crackers are lower in sodium than many crackers, but they don’t sacrifice flavor or texture to achieve that.
Recipe for Blueberry Praline Cheese Bite Cracker Spread
Blueberry Pecan Praline Cheese Bites
This simple but impressive hors d’ oeuvre recipe uses just five ingredients, not counting the crackers. Still, it creates a splendid, tantalizing flavor combination that will impress even the pickiest guest! Combined with a sweet topping, these spread-on crackers could be used for a mini dessert!
The mild flavor of a type of goat cheese called chevre, along with blueberry jam topped with crunchy pecan praline, is something to have on hand all summer! These are also really great with homemade blueberry sauce from the local farmers’ market.
Makes eight servings: 2 crackers each.
4-ounce mild goat chevre
16 Breton Artisanal Cranberry and Ancient Grain Crackers
1/2 cup blueberry preserves (made without high fructose corn syrup)
Pecan Pralines
1/2 cup pecans
One tablespoon butter
One tablespoon of brown sugar
Sprinkle of salt
To make the pralines, heat a small skillet over medium-low heat. Melt brown sugar, butter, and nuts until brown and caramelized about 3-4 minutes. Allow to cool for a few minutes before serving. To make the cracker combination, Lay 16 crackers on a cookie sheet and spread them with goat cheese. Add a small dollop of blueberry preserves and top with a few pieces of pecan praline. Place on a platter and serve.
