This is now week three of lunch recipes and menu planning ideas for the lunch challenge that you can take to work that are quick and healthy! I have based these menu ideas based on the seasons and right now we are at the tail end of spring heading into summer! It is an exciting time to have these two seasons merge to have a wide variety of local food options!

Today’s Lunch Menu

Spring Cobb Salad with  Smoked Trout

Coffee Yogurt with Grated Chocolate

If you don’t have local smoked trout, you can use smoked salmon or tuna. I am fortunate to live near Sunburst Trout . They can ship in the United States if you are interested in purchasing it.  Farm raised trout is rich in omega 3 fatty acids similar to Pacific salmon.

Spring Cobb Salad with Smoked Trout (Makes 2 servings)

It was fun to separate out the ingredients in this Smart Planet salad bowl and mix at lunch time but you can mix it all up and bring it with you. Save adding the dressing just before serving!

1 packaged hot smoked Sunburst smoked trout (you can also use cold smoked)

1/2 cup onion

1/2 cup steamed asparagus (a great way to use leftovers)

1/2 cup peas

1/2 cup carrots

2 hard cooked cggs (you can eat the egg by itself or chop and serve in the salad)

4 cups lettuce and Spinach

2 tablespoon Parmesan cheese

2 tablespoon nuts

Lemon, Oil, Vinegar and Mustard Dressing

Prepare all the ingredients and mix just before serving and add the dressing at the end.

Make a little extra and put on other salads and sandwiches!

1/2 cup olive oil

2 tablespoon red wine vinegar

1 tablespoon lemon juice

1/2 teaspoon seedy mustard like Lust Monk


Coffee Yogurt with Shaved Dark Chocolate

Adjust the sweetener if you need slightly sweeter.

1 cup plain yogurt

1 tablespoon coffee

1 teaspoon vanilla extract

1 teaspoon local honey

1 tablespoon shaved dark chocolate (I grated mine with a cheese grater)

Mix the first four ingredients and stir well. Pack in lunch container and add grated chocolate!

Try Variations to Your Salad Depending on the Season!

Summer: Try tomatoes, cucumbers, roasted summer squash and baby potatoes.

Fall: Try apples, grated root vegetables and fall lettuce.

Winter: Try canned picked beets, frozen corn, and roasted sweet potatoes with winter greens.
