Healthy Blueberry Oatmeal Bars

Try some of these blueberry breakfast bars! My husband and I are planning a backpacking trip to see the solar eclipse on August 2! We have it all planned when we are leaving and where we are going. Where to park in case there is no parking where we want to be. We even went out to scope out the location a few weeks ago because we never have been. Last weekend, which was our anniversary, we even went on our first backpacking camping trip just to see how it would go.

Did we pack enough water for the two of us and our dog? Did we bring enough to eat? Was my backpacking pillow comfortable enough? (No, I need to find a comfier one like the backpacking pillow that my husband has.) Do we have a contingency plan in case of rain and the clouds covering up our beloved eclipse? What to eat on the day of the solar eclipse? Something that will keep that is light, easy and tastes delicious! That was my inspiration for these breakfast bars!

With the whole grain of oats, the sweet taste of wild blueberries which were ones that we picked ourselves and some local honey, these bars are quick and easy to make. If you are lucky enough to see the solar eclipse like I hope I do, maybe these will be a good snack for you even if you don’t go back packing.

And check back after the eclipse to see where I viewed it as I put it in this post but give me a view day, it may take some time to get back home (I heard the traffic getting home is going to be bumper to bumper). If we because of clouds or distance to get there, we don’t get to see the eclipse, there will be lots of pictures available for us to see so we can still celebrate the event!

You might want to make these ahead of time so you will have something tasty to take with you to view the solar eclipse!

Solar Eclipse Breakfast Blueberry Bars

I don’t want to be worrying about what to eat the day of the solar eclipse, I want to be ready to view it! These bars can be made ahead of time so I don’t have to spend time making baking and not getting where I need to be! The vitamin C and antioxidants of the blueberries, the water soluble fiber from the oats and the antimicrobial/autoimmune benefits of the honey make them a super bar!

You can use a gluten free/low fodmap flour to make the bars and also substitute maple syrup for the honey to make them low fodmap. We picked these wild blueberries out on the hiking trails of Western North Carolina; you can also purchase frozen wild blueberries or use cultivated ones.

2 cups oats

1/4 cup flour (see note above)

1 1/2 teaspoon baking powder

1/3 cup honey or maple syrup (sweeter if desired)

2 tablespoon Earth Balance margarine (melted)

1 teaspoon vanilla

1 extra large egg (or two small ones)

1 cup of your choice of milk

1/4 teaspoon of salt

1/2 cup wild blueberries

Preheat oven to 350 degrees. Grease an 8 by 8 pan with Smart Balance margarine. In a large bowl add the oats, flour, baking powder and salt. Mix well. Add the melted margarine, honey/maple syrup, vanilla, beaten egg and milk until it makes a moist dough and then gently fold in the blueberries. Carefully add to pan and bake for about 30 minutes until brown at the top.
