The big game is coming soon, and I have some delicious veggie super bowl snacks!

Before going with all the old favorites, consider the fact that many of us eat about enough for several days on game day. And many of us may have even additional leftovers for days to come.

No body wants to be a “party pooper” so here are a few little switches that you can make that you can make from the high fat favorites without missing out on the flavor! In fact, I think that they even taste better! So here are some of my suggestions on lightening up a little and a tasty game time menu idea!

Cauliflower Bites with Blue Cheese Dressing

Here are some tasty cauliflower bites . I made these and they are really delicious! I love roasted cauliflower! If you have not tried roasted cauliflower, you would not believe how it melts in your mouth!

Nachos with Cheese

Nachos and cheese can add up. Instead of the cheese, try a black bean and corn relish tastes great with the chips. Try this tasty recipe!

Desserts:

Try asome fresh fruit like sliced apples and orange segments. Here are a few delicious chocolate dessert ideas here.

Alcoholic Beverages:

Alcohol can add a lot of calories also and there are other health negative consequences with too much alcohol. Have a few other beverage options available so people can have options. I love this Cranberry Pomegranate Spritzer from one of my recent blog posts!

Popcorn is a versatile ingredient and makes a filling snack!
Popcorn is a whole grain and can be used in a variety of recipe ideas.

Sweet and Spicy Snack Mix

This snack is savory with a little sweet to it also! It is a healthy option to munch! Makes 9 servings.

3 cups popped popcorn

1 cup Rice Chex

1/4 cup cherries

1/4 cup dark chocolate

1/4 cup pecans

1 teaspoon chili powder

1/2 teaspoon garlic powder

Toss all the ingredients and put in a bowl to serve!

Party Appetizers with a Delcious Twist
Party time is even better with some of thees pinwheel appetizers with pimento cheese!

Pimento Cheese Pinwheels

. Living in the south makes these pimento cheese pinwheels extra appealing! Makes about 24 pinwheels. Serving size 3 pinwheels.

1 package smaller whole wheat torillias (choose gluten-free if desired)

1 batch of light pimento cheese

Make the light pimento cheese according to directions. Divide the pimento cheese among the tortillas and spread lightly. Roll each one up tightly and allow to sit in the refrigerator at least 30 minutes. You can also let them sit overnight. When it is time to serve, set on a cutting and cut into 1/2 inch pieces. Display attractively on a platter.

Warm Black Bean and Cheese Dip with Vegetable Dippers

This delicious healthy, easy recipe is my version of a delicious black bean dip made at a local restaurant here in Asheville called Barleys. If you don’t live here, you can recreate the taste at home Vine Ripe style! 6 servings

1 15 ounce canned black beans, rinsed and drained

1/4 cup chopped onion

1 teaspoon chili powder

1 clove minced garlic

1 teaspoon corriander

2 tablespoons salsa

Salt and pepper to taste

1/3 cup light sour cream or Greek yogurt

1/3 cup shredded cheddar cheese

Olive oil

Preheat oven to 400 degress. Saute onions in about 1 teaspoon of olive oil and saute until they start to brown and caramelize.In a food processor add beans, onions, seasonings, salsa and 2 tablespoons of water. Blend until spoon and add to a greased baking dish. Carefully spread low fat sour cream or Greek yogurt and top with cheese. Bake about 15 minutes until cheese begins to brown and bubble on top.
