For the next few weeks, I am honoring the cool and refreshing foods of summer which include fruit popsicle recipes. I sharing these recipe ideas to help save you time throwing together meal and recipe ideas so you can be doing other things thinking about other stuff and staying nice and cool!

With the hot summer days, most of us don’t want to be stuck in a hot kitchen and don’t even feel like eating a warm meal. I may throw in some fun things to do too! That is why I am calling this little series:

These 3 fruit popsicle recipes are made from whole fruit and were inspired by my two sweet little grandchildren but these pops are fun for grown ups too! They are easy and fun to make too. And the best thing with popsicles is that they are there when you need them right in your freezer.

Making popsicles has become much more sophisticated and more fun than when I was a kid. My mom made the best popsicles with cherry K’ade and in an old fashioned metal ice cube tray. To eat them, I had to wrap the popsicles up in a napkin to keep my hands from freezing and to soak up the melted popsicle away from off my fingers. Later, we discovered a toothpick could be frozen in them and we could put those in our ice cube tray.

And I am talking about the metal ones that had the lever to get the ice cubes out. I don’t know if you can even find one of them now at a flea market or antique store but they were so much sturdier than those plastic ones.

When my son was little, I made a lame attempt to make him homemade popsicles but found it cumbersome and time consuming. But will all the fun molds and fun recipe combinations, I have been inspired once again to give them a try again.  I hope that you like them too!

These fruit popsicle recipes are kid tested and grandmother approved! Since these are made with very little added sweetener and mostly fresh, local produce they are healthy option for almost everyone!

First of all, you will need a popsicle mold. If you don’t already have one, here is one that you might like

Peach Melba Popsicles

Makes 6 popsicles

I love the pairing of raspberries and peaches together. I am sure that they come in season at the same time because they were made for each other! These popsicles are almost 100% fresh fruit with just a maple syrup added to them.

For people who have IBS, peaches may not always set well with your GI tract. Although peaches are one of my very favorite fruits, they used to cause IBS symptoms for me so I could only take them in small does. I am now happy to say after, I had given myself a break from them, I now tolerate them so much better.

If peaches don’t set well with you, skip them or use less and use more raspberries.

1 medium peach, pitted and chopped

6 ounces  raspberries

1 tablespoon maple syrup

Put all the ingredients in a blender and puree. Add filling to the popsicle molds and put in the freezer. When ready to serve run over hot water and carefully take the cover off the popsicle, being careful to not pull off the handle.

This is how the fruit puree will look before you put them in the popsicle molds.

Cherry Coconut Popsicles

There is nothing like local tart cherries. These beautiful yellow and red cherries were local at one of our great markets. I also love the tart red cherries. Stone fruits don’t always set well with IBS. If they both you, mix them with other fruits that you can tolerate better or give yourself a break from them. I can handle small servings of them. These popsicles use a vanilla yogurt so they are vegan.

Makes 6 popsicles

Use the cherries that grow local where you live and organic if possible. If you are using sweet cherries, you do not even need sweetener. If you are using tart cherries, use a little local honey or maple syrup to taste. The coconut milk yogurt gives a creamy, flavorful addition to the cherries and keeps this recipe dairy free!

2 cups fresh cherries, sliced in half and pitted (as I mentioned use the cherries that you have available and adjust sweetener to taste)

1/2 cup coconut milk yogurt (use regular yogurt or another dairy free option is this is unavailable

Put all the ingredients in a blender and puree. Add filling to the popsicle molds and put in the freezer. When ready to serve run over hot water and carefully take the cover off the popsicle, being careful to not pull off the handle.

To make vegan popsicles but want creamy, try a vegan yogurt

Here is the coconut milk yogurt that I used!

Blueberry Cream Popsicles

The nature of blueberries makes them sort of gritty for popsicles, you can either slightly cook them to soften them and cool or you could even put blueberries through a sieve/strainer to allow most of their skin and seeds to stay behind. These tricks make the blueberry popsicles much smoother. Because the berries will cook down and if you use the sieve, you will lose a little in the sieve add an additional 1/4 cup extra berries to be sure.

For those of you like me, who do not mind a little grit and want “all of the blueberry” raw berry,  Just puree add the yogurt and freeze!

Makes 6 servings.

1 pint blueberries

1/2 cup Greek yogurt (you can also use a plant-based yogurt like above)

1-2 tablespoon maple syrup

Put all the ingredients in a blender and puree. Add filling to the popsicle molds and put in the freezer. When ready to serve run over hot water and carefully take the cover off the popsicle, being careful to not pull out the handle.
